By far the easiest cakes you’ll ever make are old favourites that were first developed in the first quarter of the 1900s, when eggs and milk were high-cost commodities. Known as ‘Wacky Cakes’, ‘Crazy Cakes’, or ‘Depression Cakes’, these super simple bakes are soft, moist and truly delicious.
They get their rise from the combination of white vinegar and bicarbonate soda, which is called baking soda in American recipes. Apple cider vinegar gives great results, but be sure to use plain white vinegar if you’re on a low FODMAP diet and apple cider vinegar doesn’t agree with you. Don’t worry, the amounts are so small you can’t taste them! You can easily make these recipes gluten-free by using an all-purpose gluten-free flour that already has xanthan gum added to it.
