Ending the biscuit or cake debate once and for all, Paul & Mary asked their contestants to make a batch of Jaffa Cakes. For Cake Week. That leaves only one more Jaffa Cake controversy to debate over – is dunking done or not done?

This amazing free-from recipe comes courtesy of the legendary Ms Cupcake and her tip of using marmalade in place of orange jelly is a real time and effort saver. Of course, there’s nothing stopping you from making the jelly disks if you’d prefer! This recipe is dairy, egg and nut free, and can be made gluten free simply by using gluten-free self raising flour.

Biscuit Week – Gingerbread

Some of the gingerbread structures that were made for the Biscuit Week Showstopper were really inspiring. This recipe for Gingerbread uses gives you the option to use either a premixed gluten-free flour or make your own mix, which is handy! Gingerbread pub, anyone?

Bread Week – Dampfnudeln

The technical challenge for Bread Week was fairly unusual – a steamed dumpling called Dampfnudeln. While from the outset it looks like it could be more fun to say than to make, we’ve found a dairy and egg free recipe so you can have a go at it yourself. If you have a nut allergy, keep in mind that the dumplings themselves are nut free, but the filling isn’t.

Batter Week – Yorkshire Pudding

Batter Week proved interesting with some great ideas for filled Yorkshire Puddings. Yorkies are an essential part of a traditional British Sunday Lunch, and they’re not difficult to make free-from. This recipe is free from egg and dairy, and can be made gluten-free by swapping out the flour for gluten-free flour. It’s worth noting that this recipe uses Kala Namak – a salt which adds a sulphur taste to your cooking. If you don’t have Kala Namak, just use table salt.

Pastry Week – Raspberry Cheese Danish Pastries

There are many ways to make a Danish, and perhaps one of the most simple ways would be to use pre-packaged puff pastry. Using puff pastry would work fine, and you’d get both a lovely pastry and a little more time to sit back and enjoy them. However it’s worth keeping in mind that there are two ingredients that Danish pastry has that puff doesn’t – yeast and sugar. So, if you want to make a proper Danish pastry, we’ve found a great free-from recipe for you.

Botanical Week – Lemon Meringue Pie

While Botanical Week saw the bakers using lots of Edible Flowers to decorate their cakes, it was the signature dish that caught our eye. Citrus Meringue Pie is a hugely popular dessert that those of us who don’t eat egg have often had to miss out on. Until now. Once again, it’s aquafaba to the rescue! Save the unsalted water from a tin of chickpeas and use it to whip up an egg-free meringue that goes beautifully with a citrus tart. This recipe has some helpful notes about using aquafaba, so be sure to have a good read of those before embarking on this particular number. Also keep in mind that this recipe uses Almond milk, so swap it out with Oat or Hemp milk if you need to make this nut free.

Dessert Week – Strawberry Mousse Cake

Making Mousse Cakes can be tricky and time consuming, but when you get results like these it all seems so worthwhile – especially if you’re baking for a special occasion. This recipe is dairy and egg free, and the only gluten containing ingredients are Graham biscuits which can be easily swapped out. Keep in mind that this recipe also uses aquafaba – the water from a tin of chickpeas. Once again, be very careful to use unsalted chickpea water when cooking sweets.

Tudor Week – Millet Pie

Tudor week stood out because of the pies. Lots and lots of pies. This recipe for Millet Pie is brilliant for a Meat-Free Monday and, although it looks like it has a lot of ingredients, it’s actually quite simple. Most of those ingredients are spices and veges which you can roughly chop up nice and small and cook together in a pot. This a much healthier pie than the Tudors would have eaten!

Patisserie Week – Pepper, Sundried Tomato & Olive Palmiers

Palmiers are amazingly easy to make if you’re happy to use a packet of ready-rolled puff pastry instead of making it yourself. One of the best things about using store-bought pastry, besides the time it saves, is that it is usually egg and dairy free, and there are an ever increasing number of gluten-free options as well. Although this recipe uses egg to baste, if you use soy milk instead you’ve instantly, and easily, veganised them.
